Ahh, my two greatest loves: fresh summer fruit and breakfast. My idea of paradise is a place where it’s summer all year and every restaurant has an all-day breakfast menu. A while ago we went for brunch at El Cortez here in Edmonton, and I had their cinnamon corn french toast with saskatoon berries, mint, maple mezcal syrup, and thick coconut cream. Just typing those words is making my mouth water. I loved the combination of corn, blueberries, and coconut, so I decided to make my own version with beautiful BC blueberries.
